Pinto Beans
Ingredients
1 Medium Bag of Pinto Beans
1 Medium Onion, Coarsely Chopped
5 Cloves of Garlic, Crushed
1 1/2 tsp Chili Powder
1 tsp Salt
1 tsp Pepper
1 tsp Annatto (Achiote Molido)
1/4 - 1/2 tsp Cayenne Pepper (optional, for heat)
1 Ham Hock
Directions
Rinse and sort dry beans in a strainer. Sorting means to remove black or cracked
beans. Place in a pan with six cups of cold water. Soak overnight, eight to ten hours.

Add all ingredients.

Cook covered on low heat for about two hours or until beans are tender. Stir
gently every so often.
|
Discard the ham hock. It is for flavoring only.
